Lite Lasagna
This week, work brings me to Huntsville, AL - home of Redstone Arsenal, and conveniently, my hometown! I have had the pleasure of staying with and cooking with my parents.
We all know how much I love great lasagna! On Sunday, inspired by a recipe in David Kirsch's Ultimate New York Nutrition Plan, my mother and I made a low-fat, carbless turkey lasagna. Surprisingly, it had tons of great flavor thanks to plenty of veggies and spices.
First, we peeled and cut an eggplant and a zucchini lengthwise into strips and baked them on a cookie sheet in the oven for 15 min at 400*. Next, we browned half a pound of lean ground turkey on the stove, with oregano, black pepper, and a pinch of cayenne pepper. Next we made a "marina sauce" with a can of diced tomatoes, a can of tomato sauce, dried basil, oregano, and some diced onions and zucchini. When all the components were ready, we layered everything in a casserole dish as follows: eggplant, turkey, marinara sauce, zucchini - repeat. Top with extra sauce and bake in over for 15 min at 375*. Top with fresh basil. Delicioso!

Monday - 3 miles on treadmill
Tuesday - 4.5 miles outdoors
Wednesday - Cross training on elliptical
